Many people skip resting meat after cooking, but this is a critical step for perfect results. After cooking on KOM charcoal, proper resting makes a huge difference.

Why Meat Needs Rest

During cooking, juices in meat move toward the center due to heat. If you cut meat immediately, these juices will flow onto the plate instead of staying in the meat.

What Happens During Rest

When meat rests, juices redistribute evenly back throughout the piece. Muscle fibers relax and absorb liquid. The result is juicier and more tender meat.

How Long to Rest

General rule is 5-10 minutes for thin pieces (steaks, chicken breasts) and 15-30 minutes for large pieces (roast beef, whole chicken). For very large pieces - up to 1 hour.

How to Rest Meat

Move meat from KOM charcoal grill to cutting board. Cover lightly with aluminum foil, but don't wrap tightly - you want to keep the crispy crust.
