Patience is key in BBQ. Putting food on the coals too early is a common mistake. Here is how to know when KOM charcoal is ready.

Black is Bad, White is Good

When you first light KOM charcoal, it is still black and releasing initial smoke. Do not cook now! Wait until they are covered with a thin layer of white ash.

The Hand Test

Once KOM charcoal has ashed over, hold your palm about 12-15 cm above the grate. - 2 seconds: High heat (for searing steaks) - 4-5 seconds: Medium heat (for chicken and vegetables) - 7-8 seconds: Low heat (for slow cooking)

Look for the Orange Glow

At night, it's easiest to see when quality KOM charcoal is ready - it should have a deep, even orange-red glow beneath the white ash.

The Difference from Briquettes

Unlike artificial briquettes, natural KOM lump charcoal reaches readiness much faster (in 15-20 minutes) and burns hotter.
