Grilled eggplant is the base for many traditional recipes. With KOM charcoal, you achieve that unique smoky flavor.

Preparation

Choose medium-sized eggplants. Brush them lightly with olive oil and prick them in several places with a fork.

Grilling on Embers

Place the eggplants directly on the embers from KOM charcoal. Turn them every 5 minutes until the skin blackens and the flesh softens.

Peeling and Use

After grilling, let them cool, peel them, and use for kyopolou, eggplant salad, or other recipes.
