The Minion method is a classic technique for maintaining stable temperature, ideal for hot smoking fish. With KOM charcoal, this method works flawlessly.

Origin of the Method

The method was created by Jim Minion for BBQ competitions. The idea is simple but effective - a small amount of lit charcoal gradually ignites a large amount of unlit charcoal.

How It Works with KOM Charcoal for Fish

Fill the charcoal basket with a small amount of unlit KOM charcoal. Place 5-8 lit pieces on top. They will gradually ignite the lower charcoal, providing gentle and stable temperature ideal for delicate fish.

Quality KOM charcoal from beech, oak and hornbeam is ideal for this method. They burn slowly and evenly without producing excessive ash that could land on the fish.

Temperature Control

Regulate temperature through ventilation openings. More air = higher temperature. With KOM charcoal, you can easily maintain 80-110°C for perfect smoking.
