Grilling a whole chicken is often a challenge – by the time the thighs are done, the breast is dry. The Spatchcock method solves this.
What is Spatchcocking? By removing the backbone and flattening the chicken, you allow it to cook evenly and significantly reduce grilling time.
Indirect Heat with KOM Charcoal Use KOM charcoal to create two zones. Place the chicken in the cool zone and close the lid. The hardwood will maintain a steady 180-220°C temperature, acting like a wood-fired oven.
The result is incredibly juicy meat with a subtle smoky aroma that only quality charcoal from the Berkovitsa mountains can provide.
